Rotis or flatbreads

Roti is part of almost every meal in the region and is delicious when eaten hot and fresh off the stove. People in Haryana are fond of eating various types of rotis: from wheat rotis to baajre ki roti (flatbread of pearl millets). There are other varieties too that are made of gram, barley etc., that are truly nutritious.

Mithe chawal

Mithe chawal or sweet rice is a dessert made with ghee (clarified butter). The main ingredients used in it are Basmati rice, ghee, sugar, saffron, cardamom and dry fruits like cashews, almonds, raisins and pistachios. It is best served hot and fresh.

Kheer

A rice pudding made with thickened milk and garnished with sweet spices and dry fruits, this is a decadent sweet dish that is a must try. It can be relished both hot and chilled.

Lassi

A rustic beverage, lassi is delicious in both its sweet as well as savoury avatars. An instant summer cooler, it is made with yoghurt and has a creamy texture.

Kadhi pakora

A local staple, any visit to Kurukshetra is incomplete without savouring this spicy and tangy stew made with lentil flour and curd. To make this, gram flour pakodas (fritters) filled with onions are dipped in a creamy curry made from sour yoghurt. Kadhi pakora is best served with plain rice or flatbread and can be eaten both for lunch and dinner.
